The territory of Casole

The territory of Casole, in the district of Lamole – Greve in Chianti, a wide, sunny valley that is catheterised by its altimeter diversity, from 450 to 650 meters above the sea level. The terrain is mainly sandy: they are loose terrains, that originates from a millennial crumbling of sandstones, not compact but very permeable, poor in organic substances. The strong temperature range, the exposure at southern Italy and the composition of the soil, confer to the I Fabbri wines, particularly  to the Sangiovese grape, unique and recognisable organoleptic features.

Among these:

  • A colour which is never too loaded
  • Refined, elegant, crunchy perfumes; like the ones of fresh cherries and raspberries
  • Generally a light or average body, graceful tannins, a great balance and a pronounced freshness, that gives a good longevity to the wines.


The philosophy of I Fabbri is to preservethe natural resources and to value the peculiarities of the territory. Typicality and tradition are always tied together with techniques which have less impact in the vineyards and in the cellar, in the optic of natural wines that are a  fascinating and genuine story of the Chianti Classico.



This business is organic, with Q Cert certification. The organic conversion was a natural process, without forcing, with the goal to guarantee  a major respect towards the environment and the consumer. I Fabbri has chosen to adopt a sustainable agriculture, socially and environmentally  correct.
